Course Objectives The aim is to provide knowledge and skills regarding quality management systems in institutional food service (IFS).
Course Learning Outcomes The students who succeeded in this course;
  • Defines the ISO 9000 Quality Management System.
  • Understands the importance of the HACCP system and the implementation stages within IFS.
  • Interprets the ISO 22000 and FSSC 22000 Food Safety Management Systems from an IFS perspective.
  • Adapts food safety management systems to collective catering systems.
Course Content Definitions and importance of quality, food safety, quality systems and consumer expectation, ISO 9000:2000 quality management system, definition, importance and history of HACCP system, operational prerequisite programs, principles of HACCP, TS EN ISO 22000 and FSSC 22000 food safety management systems, new approaches in food safety.
